Ours is a small certified organic farm with an adjoining oil mill located in the Casoli province of Chieti, in the Sangro-Aventino area, at the foot of the Majella. The management of the company is family-run. In the 15 hectares of the farm, in addition to the olive groves which are the main cultivation, vegetables, cereals and legumes are grown. Over 7 ha is the extension of the olive grove, about 1,200 olive trees, mainly of the most representative varieties of our territory, Gentile di Chieti, Intosso, Crognalegno and Cucco, organically grown. The olive trees are grown with a free vase, with a 6x6 quincunx planting, the olive harvest is mechanized, a trunk shaker and an umbrella for the collection of olives that detach from the plant and is carried out at the beginning of veraison, when the the drupe's epidermis begins to change color and from green begins to turn purple. This collection system allows us to carry out the entire operation quickly, in ways that do not damage the drupe, as often happens with pickers, nor do they soil it, because contact with the earth is avoided. The delivery of the olives to the oil mill therefore takes place within the day, thus easily overcoming that important criticality which is the time between harvesting and crushing which, in order to obtain quality productions, must be as short as possible. From the field to the mill in a matter of minutes, here, in a modern continuous plant, the olives are promptly processed by Domenico, manager of the company and expert taster. From here the oils obtained, which can come from pitted or whole olives, are conveyed into stainless steel tanks in an ancient cellar with cross vaults with optimal temperature conditions. Next to the storage, the conditioning room, here after the oils have been decanted to free them from sludge, they are packaged. Even in the oil mill eco-friendly behaviors are adopted, because respect for the environment is a mission for the company, in fact the energy used is obtained from integrated photovoltaic panels for electricity and from the kernels resulting from the processes, which feed a special burner , to produce domestic hot water.For more than twenty years we have included the production of preserves in organic extra virgin olive oil. The vegetables are homemade, are organic and are processed in the company's artisan laboratory following the recipes of the peasant tradition, therefore they do not contain preservatives or chemical additives of any kind, are genuine, and are tested by laboratory controls, this to avoid every type of risk for the consumer and to guarantee the quality and seriousness of the company itself. The work of our company aims to make the history, quality, goodness and typicality of Abruzzo food and wine production known inside and outside the country for a healthy and genuine diet with km.0 products.
