Cascina Lassi, family-owned company managed by Zuffada family for over 60 years, covers an area of 57 hectares within the Agricultural Park South Milan, in the territory of Cerro al Lambro.
The fruits of the land
The land surrounding the farm is cultivated mainly corn, even with old varieties such as the Storo Nostrano and Pignoletto red. From corn, ground by stone in a water mill according to ancient tradition, producing flour polenta. As well as corn, even the wheat - grown on the remaining parts of land - is ground using traditional methods. The result is excellent flour for both stock preparation for pizza is sweet, chosen by Slow Food to carry out pilot projects for the breadmaking.
For a couple of years, a small but well-kept plot of land was allocated to garden. Since the Cascina Lassi, in cultivation, we follow the cycle of nature and let stand the earth in winter, the season when vegetables are available from March to December. In the production, we are not used greenhouses and vegetables are grown in open fields, without the use of herbicides, fertilizers or pesticides. The harvest, depending on the seasons, is rich in every variety of vegetables: from spring salads to typical summer vegetables such as tomatoes, peppers and eggplant, then moved to the vegetables of the autumn-winter period, such as coasts, chard, leeks, broccoli, onions, potatoes, cabbage, pumpkins and fennel. Right next to the garden, it was created a small truffle, which soon will be able to get away with black truffle, whitebait and scorzone.
The breeding of pigs present on the farm follows the specification by the consortium of Parma and San Daniele and abides by animal welfare standards. The animals intended for the production of sausages and meat, the Cascina Lassi are raised in an outdoor paddock, left free to move outdoors and fed exclusively raw materials grown on the farm.
Always attentive to the quality of its production, the Cascina Lassi aims to offer customers a product different from that of large retailers. Here is a brief description of the items produced and sold on the farm and through the Geomercato platform.
The sausages are produced in the traditional way, using natural casings, without the use of coloring agents and thickeners, hand-tied and made to mature naturally in cellars. Every day, a small herd of hens reared completely in the wild, providing fresh eggs. Grana Lodigiano Typical cheese sold on the farm and from other producers in the South Milan Agricultural Park is manufactured in compliance with the tightest quality standards and marketed just over 18 months of seasoning.
Honey Beekeeping Veca is produced naturally and itinerant way, by moving the hives depending on the flowering plant area without feeding the bees artificially.
