In one of the most beautiful areas of Molise, between the coastal hills of Campomarino to 80 mt. above sea level, 4 km from the sea, is the company Agricola Di Vito.
Within the same company, for 20 years has been implanted with a crusher for the processing of olives was by own account that for third account. The company grows its own about 1,000 plants of different varieties of olives: Leccino, Gentile di Larino, Peranzana.
Over the years the plant for processing olives is changed through extraction with the traditional system to the continuous, first by working in three phases before moving, always changing Decanter for the extraction, and to keep pace with the Rates, processing in two phases; this to always improve the quality of oil.
Oleificio Di Vito scrupulously follows each stage of production, from collection to processing in the mill, ensuring a high quality oil. Prior to extraction, the olives are separated from the remaining foliage through automatic machines to vacuum, then it follows washing with forced circulation of water that eliminates residues and impurities.
At this point the olives are ready to switch to the extractive phase, which occurs through the method of centrifugation (Decanter), which, exploiting the different specific weight of each component, leads to the separation of pomace, vegetable water and oily component.
Thus obtaining an oil, rich in natural substances such as antioxidants (polyphenols) and aromatic, from the clear yellow color with green hues with low acidity, a light fruity taste fruity.
The company produces selection of extra virgin olive oil, extra virgin olive oil DOP Molise, extra virgin olive oil from organic farming, with a production of about 40-50 thousand liters year; also it produces aromatic oils, not from herbal teas, but the olives working directly with various products such as oranges, lemons, peppers, rosemary.
Marketing is done for direct sales in the classic 5-liter formats, 3-liter, 0,75- 0,50- 0.25- 0.10 lt.
