Beef: beef cattle breed semi-wild state along the lines defined cow-calf, in the High Valley Staffora.
The herd is bred in the wild throughout the year: in the cold months have large enclosures and shelters at the business center, fed with fodder produced on the farm: good hay of our integrated fields with a mixture of barley (always cultivated on the farm), corn and beans crushed Piacenza certified GM-free.
In May it comes out in the bottom of the valley meadows and start the grazing season. As the grass grows, it is transferred on top of pastures, above 1500 meters, where it remains throughout the summer, until the end of October, in freedom. Along with it go up on the mountain pastures calves, always living in his mother's side, she fed her milk up to 7-8 months of age.
The calves are separated at the age of 10 months from the rest of the herd to begin the phase of fattening and finishing in large boxes at the business center; the power is composed of 60% maggengo hay, alfalfa 15%, barley corn and beans for the remaining 25%.
Our product: the meat is sold fresh and vacuum-packed in "family packs" from 6-10 kg;
the garments are slaughtered between 14 and 16 months of age. And 'meat of beef and heifer, which contains less water than the calf and generally has a higher protein content.
