The Company
The extra virgin olive oil oil derived Court is the result of an indigenous cultivar of Caltabellotta: The Biancolilla!
The oil obtained is looking slightly hazy golden-yellow with greenish hues, fruity aroma of medium intensity reminiscent of the fresh olive scent with almond and artichoke and fruity taste with a hint of bitterness and pungency great for seasoned fish, white meats, soups and vegetables, and desserts can be used instead of butter.
In 2010 I made the leap going from conventional to organic, oil is controlled and certified by CCPB srl under Reg. EC 834/2007, www.ccpb.it my ID is AD16.
The olive harvest begins the first week of October, is done by hand and with olive harvesters tires for ease of harvest, the olives are placed in plastic boxes and once you arrive to the mill (end of day) are pressed within 20 hours with procedures mechanical with cold abstraction, the oil is decanted naturally for at least 15 days, in fact any sediment at the end of the can is something quite natural.
