We are a farm for many years engaged in the cultivation of cereals and vineyards, our passion for beer has given us the idea of giving life to the brewery that remains tied to our agricultural activities, because we cultivate the land we have available with barley and hops, using organic methods. This means starting from a seed not chemically pre-treated (the seeds usually used nowadays do not have a very natural red color, which suggests heavy suffered transformations) and use the rotation in crops instead of fertilizer, which lets not pollute the land and the harvest, while maintaining the quality albeit with a lower yield. In particular, in the case of malting barley, a high protein content caused by excessive fertilization is counterproductive for the goodness and the clarity of the beer.
The brewery is located in an old farm building probably dating from the late eighteenth century. The plant occupies only part of the building, the rest can still see the old stables and the barn. The plant to produce the beer consists of a "cooked" 600-liter, three fermenters from 1200 liters each, two cells from 20mq of which one (warm 18 °) to the fermentation in the bottle and a cold 5 °, for the ripeness. We also have a water purification plant. We installed on a pitched roof of the brewery 27 photovoltaic panels that produce the energy needed for its operation.
