The Company
They are cheesemaker in a small town in the mountains and hills of Basilicata with a dairy company in its production of cheese and dairy products that was handed down from father to son since 1974.
My cheese as usual are prepared without the use of preservatives; the only ingredients are raw whole milk, rennet and salt that thanks to the traditional processing make cheese a unique and easily findable in the era of 'industrialization.
The production with raw whole milk (which comes from a local company at 1.6 km) makes the milk keep all microbiological characteristics that are fundamental part of the birth of the typical cheeses.The natural microenvironment favors of cheese ripening processes, as well as the use of wood that is an excellent array of maturation. Specializing in making Vacchino of the Murgia Typical mountain cheese and Lucan hills where cows are reared even in the wild.

Occasionally this year they also sell Extra Virgin Olive oil and wine of our production.
