The cheeses made with rennet system (heating the milk to about 34 °) are suitable for a short or long seasoning and, except for the so-called first sale, nor fresh consumption is not recommended because the flavors are not yet formed, and the ' aging given by maturation has not yet produced the desired effects of the typical processing of cheeses, robiole and larger forms seasoned. The lactic processing (naturally clot in times ranging from 12 to 24 hours) lends itself to the creation of fresh cheeses, soft, sweet, immediately consumable that if left to mature, completely changing the initial flavor by opening a spectrum of flavors, sometimes strong, characteristic of goat cheeses. All our cheeses are free from preservatives and from any type of chemical treatment also on the outer crust. The maturing of our cheeses is done in special ripening rooms and the attention paid during this operation allows us to obtain high quality products of which we are truly proud.
