This pasta is obtained from a natural stone grinding of ancient varieties of the national wheat

The flours are cleverly drawn to the bronze and dried slowly at low temperatures from the pasta factory

Pasta it is everywhere: industrial, semi-artisan and crafts with their merits and defects of each type and compromise.

The value is in the raw material, processing, transformation and in drying; in short, in the supply chain. Each step has its own particularities that lend the maximum attention.

It is the work and the choices of one year.

The paste is ground prior to natural stone in slow rotation order not to heat the corn, then the flour is dried at low temperature for 20 hours.

In doing so we have preserved the organoleptic and olfactory characteristics of our ancient grains.

One mistake, one deburring and we would not get the same product, so we have not made any compromises in the whole chain
