Description
La raccolta delle uve avviene manualmente senza l'utilizzo di macchinari. I grappoli vengono subito consegnati alla cantina partner dove vengono pressati senza passare per la diraspatrice. Si procede succesivamente alla decantazione e all'abbattimento della temperatura, così da separare la parte solida residua. Filtrato il mosto è pronto per la prima fermentazione che avviene in botti d'acciaio a 14°C, mentre la seconda fermentazione avviene in autoclave in cui poi avverrà anche la spumantizzazione per una durata di 40 giorni (metodo Charmat). Prima della messa in vendita il vino viene fatto maturare per almeno 30 giorni in bottiglia. Caratteristiche organolettiche Vino brillante e limpido dal perlage fine e persistente, colore giallo paglierino scarico. Sapore energico e invitante con un ottimo equilibrio tra acidità e dolcezza, fruttato con ricordi di mela verde e una caratteristica nota di glicine. Abbinamenti Ideale sia con preparazioni dolci che con preparazioni salate, ottimo come aperitivo. Accompagna egregiamente primi piatti a base di pesce. A fine pasto si abbina a dessert non troppo zuccherati come crostate o strudel.
