La Pera Petrucina è una antica varietà rustica salentina di pera; Il suo frutto molto piccolo, che lo rende difficile da lavorare meccanicamente, e la spiccata tendenza all’ammezzamento (con frutti maturi all’ interno mentre esternamente sono ancora acerbi) hanno comportato l’abbandono di questa coltivazione. La petrucina però, che richiede molto lavoro manuale durante la raccolta e la pulitura del frutto, è una pianta che non richiede irrigazione o trattamenti particolari, essendo perfettamente integrata nel territorio. Inoltre il suo sapore dolce senza essere eccessivo, è un vero capolavoro della natura. I nostri alberi, alcuni secolari, anno dopo anno ci regalano queste meraviglie che lavorate appena colte fanno di questa confettura extra un inno alla gioia per il palato e per l’ambiente. La «pirata» in salento indica esclusivamente la marmellata fatta con la «piriceddha», la petrucina. Va preparata appena colta, prima che diventi «ficateddha», troppo matura e scura. E’ l’unica marmellata a cui è concesso di sostituire la crema nel pasticciotto leccese. E non è poco.
