L 'Azienda Agricola Belfiore is located in the municipality of Castelnuovo Magra, in eastern Liguria on the border with Tuscany. L 'Azienda Agricola Belfiore is a young family company that combines the experience of three generations of olive growers in respect of the culture and traditions of the place. It covers an area of 6 terraced olive grove hectares, with approximately 1500 secular olive trees a part of which is the result of a careful restoration of abandoned olive groves.
Thanks to the selection of native cultivars in the olive groves, the 'company produces extra virgin olive oils valuable monovarietali widely recognized at the national level.
The passion for the 'agriculture, care and respect for nature, the constant and strict control of the production process are the business characteristics that are reflected in the quality of products Belfiore.
OLIVE GROVES AND THE PRODUCTION PROCESS
Olive groves' Azienda Agricola Belfiore are located on terraced slopes facing south-west and surrounded by unspoiled nature. One of them is in the territory of Montemarcello-Magra Park. The geographical location and the cultivation documented since the fifteenth century, make that in this area is host to the most varied and functional complex of olive-growing breeds that you can record in all of Liguria. There are the native cultivars Razzola, Lantesca, Prempesa, Leccione and Castelnovina and, minimally, young plants of national varieties such as Frantoio, Leccino and Taggiasca who replaced the centuries-old trees lost as a result of the great frost of 1985. All plants are reared in semi-free umbrella shape. Fertilizing and defense to parasites are carried out in accordance with the specification of the integrated agriculture. The summer water demand is covered by irrigation systems.
The olives produced from 'farm Belfiore are harvested from mid-October to mid-December, directly from the tree by hand picking and facilitated. The freshly picked olives are stored in perforated plastic boxes, which allow air to circulate, and transported in the day to a trusted mill where they are immediately pressed.
Washing, milling, kneading and cold-extraction are the machining operations of the olives and are carried out with a continuous cycle systems. An essential process to ensure the very low acidity of extra product, ensure the presence of high amounts of antioxidants such as phenols and polyphenols and, not least, maintain unchanged the taste and odor of the ointment.
The freshly pressed oil undergoes a filtration process to remove any residue and subsequently is stored in stainless steel containers in air-conditioned environment in order to maintain the organoleptic and biological characteristics.
Bottling is carried out just before the sale.
