Our farm is located a on the western shore of the ancient river Kothon, a few step from the Archaeological park of Selinunte, Sicily.
Every autumn in early October, in those days when the olives are not yet fully ripe, we harvest our olives using exclusively the traditional hand-picking method and no use of nets. Thanks to same-day pressing of the olives, we finally extract a unique extra-virgin olive oil, with superior organoleptic characteristics.
Its unique taste balance, with an intense fruity flavour, a light-pungent bitter note and a delicate-spicy aftertaste, make Kothon highly acceptable by every palate. The perfect complement to every food, either cooked or raw.
Kothon is counted in the following guide of extra-virgin olive oil: FLOS OLEI 2016, SLOW FOOD 2017 and SLOW FOOD 2017, GAMBERO ROSSO 2017.
The slogan just try to show the reality of evoo market in Italy. Our MISSION is to help to grow up the culture of the most important ingredient of the Mediterranean Cuisine.
